Eggplant Burger. A main course with vegetables, Fast simple to implement, tasty and highly effective on your guests.
If you have children at home who do not like much the vegetables, I advice you to amaze you with these delicious Eggplant Burger, serve with soft hamburger buns.
Time: 20 minutes
Ingredients: for 3 People
1 .5 average Eggplant
2 tablespoons of breadcrumbs soaked in .5 Cup of milk (or three slices of bread ( all gluten free). I have uses the bread crumbs by PIACERI MEDITERRANEI .
salt to taste
2 tablespoons of grated Parmesan cheese
oil as required
wash and peel the aubergines. Dice, and FRY in a pan with a little oil and salt.
Put the eggplant in a bowl together with the egg, grated Parmesan, the breadcrumbs soaked in milk and wrung.
Divide the mixture into 3 equal parts and form 3 burgers.
Pressed the mixture well so as to make the burgers compact. Cook in frying pan with little oil and FRY on both sides.
Lift with a spatula and serve immediately.
