Tartare is a starter or a delicious second that you can serve on many occasions.
Meat or fish, this preparation is made with ingredients entirely raw.

Its origin goes back to the Eastern gastronomic tradition, although the fame of this dish was born in France.
There are many variations of both fish and meat tartare.

Today we prepare the Salmon and Avocado Tartare.

The fish should always be fresh as it will be served raw.
Breaking down for 48 hour the fresh salmon fillet or freeze it for 96 hours at -18.

Very important is to cut the ingredients by hand. Electrical equipment can change the color and especially the taste of fish

To serve the tartare, You'll need a pastry cup (a kitchen fork that helps build your tartare so that it's also beautiful to see, as well as very good).

Salmon and Avocado Tartare.
Ingredients for 4 people:

icon checkmarkNorwegian salmon fillet 400 GR
icon checkmarkFresh ginger 3 GR
icon checkmarkLime zest 1
icon checkmarkFine salt 1 pinch
icon checkmarkRice vinegar 10 GR (just as it is)
icon checkmarkAlmonds 30 GR (chopped or flaked)

For the avocado cream:

icon checkmarkMature avocado 400 GR (I have used Organic Avocado of Sicily)
icon checkmarkLime juice 1
icon checkmarkFine salt 1 pinch
icon checkmarkPiccadilly Tomatoes 100 GR

Proceedings:

1)Take the salmon fillet and remove any bones and if there is also skin, then cut it into cubes.
2)Transfer to a small bowl and add the salt, lime zest, juiced rice vinegar and ginger.
3)Marinate in the fridge 30 minutes.

The avocado cream – Proceedings:

1)Cut the avocado into cubes and crush with a fork to create a cream
2)Add and mix tomatoes into small pieces, lime juice and a pinch of salt.
3)Let it sit for 30 minutes;

To serve:

1)Use a round kitchen pastry cup 8 '':
2)Place part of the avocado cream inside the pastry cup;
3)Add tartare;
4)Compress with fork and remove the pastry cup;
5)Add almond grains or flaked almonds to garnish;

Done. You have finished your work. Easy execution. Sure success.
