Raw spinach salad: remember that the quality of the ingredients makes the difference, As always.


Spinach must be purchased very fresh, young and small because they are more tender and have still smooth and crunchy leaves.

The leaves must be of an intense green color.

Check that the leaves are not yellowed and do not have stains.
Carefully pick up spinach and wash well in cold water and baking soda.


Gorgonzola exists in two variants:

Sweet: of creamy texture and a more delicate taste.
Spicy: characterized by a more intense aroma and a harder paste.

You are free to choose the Gorgonzola of your choice to flavor this salad, as both are perfect .

It's important that you buy the "real" one.: the “ Gorgonzola DOP ” is covered with aluminum foils that have “g” embossed stamps against the background of the foil that wraps the cheese: you can't go wrong.

Once you buy the gorgonzola, stored in the refrigerator in a tightly closed container or wrapped in film so that it does not come into contact with air that can oxidize and favor the formation of a yellowish patina.

Last recommendation: remember to remove the gorgonzola from the refrigerator at least 1/2 hours before, because the Gorgonzola, like all cheeses, releases its aromas at the best at room temperature.

Ingredients for 4 people for a tasty Raw Spinach salad and Gorgonzola:

icon checkmark80 GR. – of pere Abate (1 or 2 pere to your taste);
icon checkmarkExtra Virgin Olive Oil (Extra Virgin olive) – quantum satis

Preparation of Raw Spinach and Gorgonzola Salad:

Quick and easy preparation: about 15 minutes.
After cleaning and washing spinach well, put in a tray.

Dissolve half the gorgonzola in a bain-marie or microwave. The remaining gorgonzola must be cut into cubes.
Peel the bead and cut into cubes. Shell the nuts and break into small pieces.

Season spinach with nuts, Pear, pieces of gorgonzola, salt and oil and the loose gorgonzola. Mix well and serve at the table.
